Shiitake Mushroom Bacon

Ingredients.
1 tablespoon neutral oil - like olive oil
4-5 ounces shiitake mushrooms
1 teaspoon smoked paprika
1 pinch cayenne pepper (optional)
1 tablespoon tamari or liquid amino
1 pinch flaky sea salt (or substitute kosher salt)

Steps.
Preheat oven to 350.
Slice the mushrooms and toss in a medium bowl with the rest of the ingredients.
Spread into a single layer on a parchment-lined cookie sheet.
Bake for about 30-45 minutes or until crisp. Check on them every so often to make sure they don’t burn, but you do want them crunchy.
