Smoked Spaghetti Squash

Spaghetti squash makes a great main or side. Smoked with or without BBQ sauce, throw some into a salad bowl or use 1/2 of the squash as the bowl and load it up with your favorite sides and smoked mains.


 

Ingredients.

  • 1 spaghetti squash, any size

  • 2-3 tablespoons of Pure Grit Rub

Prep.

  1. Cut the squash in half lengthwise. 

  2. Use a spoon to remove the seeds.

  3. On the ‘meat’ part of the squash, liberally apply the rub making sure to massage into the squash.

Cooking.

SMOKER

Temp: 225° | Time: 1 hour | Woods: Hickory, Alder, Apple

OVEN SMOKER BAG

Temp: 475° for 10 minutes then 375° for 45-60 min  | Time: 1 hour
Woods: Hickory, Alder, Mesquite

Spray the inside of the bag with cooking spray.

Smoker bags can also be used on any grill or over a campfire.

STOVE TOP SMOKER

Temp: Medium heat  | Time: 40 minutes | Woods: Hickory, Alder, Apple

For easy clean up and to prevent sticking, consider lining the drip tray with foil.

REGULAR OVEN

Temp: 375° | Time: 1 hour or until tender

It’s also possible to use your regular oven or stove (times and temps vary).  But, using a smoker or smoker bag will yield a more authentic smokey BBQ flavor. Plan to cook it for about an hour at 375° - until fork tender.  

Finish.

Using a fork, shred the meat out of the squash. It should come out with a spaghetti-type consistency. Serve as-is, or toss with BBQ sauce in a skillet for 3-5 minutes.

Serve.

It’s great on a Pure Grit Waffle with broccoli slaw and Smoked Mushrooms.  Trust us - it goes with everything. It’s even great for bowls and salads without the sauce.

Pro Tips.

Use the entire half of the squash as a bowl and the “meat" becomes the best base for so many things like salad, roasted veggies, Mexican bowls, etc.
