BBQ Cauliflower Wings
This is a simple recipe that we adapted from Jessica in the Kitchen - one of our favorite vegan cooks/influencers.
We have only 3 additions:
Pure Grit Rub to the batter
Room temp unsweetened almond milk that we curdle with a tablespoon of lemon juice
Pure Grit BBQ sauce mixed with our hot sauce and a dash of cayenne pepper to taste
Ingredients.
1 medium head of cauliflower
¾ cup gluten-free flour (or any you like)
3 tablespoon cornstarch
¾ cup unsweetened almond milk (room temperature)
1 tablespoon lemon juice
¼ teaspoon salt
½ teaspoon pepper
½ teaspoon garlic powder
1 cup gluten-free bread crumbs (or any you like)
1 tablespoon Pure Grit Rub
1 ½ cup Pure Grit BBQ Sauce
3 tablespoon Pure Grit Hot Sauce
¼ cup of water
A dash of cayenne pepper to taste
Steps.
Preheat the oven to 450° F.
Prepare baking sheet with parchment paper.
Cut cauliflower into pieces - try to keep some of the stalk so there is something to grip like a chicken wing.
In bowl or cup add 1 tablespoon lemon juice to ¾ cup almond milk and let rest 10 minutes
In a separate bowl mix ¾ cup flour, 3 tablespoon cornstarch, ¼ teaspoon salt, ½ teaspoon pepper pepper, ½ teaspoon pepper garlic powder, and 1 tablespoon rub.
Once mixed, pour in the almond milk mixture. At this point you may need to thin it out. Add a few extra tablespoons of almond milk.
Dump cauliflower pieces into the batter and coat completely.
Pick up individually and drop into a bowl with bread crumbs. Do in batches of 3 and often sprinkle with more breadcrumbs. Once coated, use tongs to transfer to the baking sheet.
Bake for 20 minutes or until golden brown.
Meanwhile, whisk together your BBQ mixture - 1 ½ cup BBQ sauce, 3 tablespoon hot sauce, ¼ cup water, and cayenne to taste.
When cauliflower is done, warm up the BBQ mixture in the microwave for about 1 minute.
Toss cauliflower in BBQ sauce and then place back on the baking sheet and pop back in the oven for 5 more minutes.
Serve alone or with a dip.
We like ranch, this is a simple recipe that uses ingredients you probably already have. You can sub fresh herbs for a teaspoon of Italian seasoning.
