Just Coleslaw

Coleslaw makes barbecue, barbecue. It adds a crisp coolness to the heat and brightens everything on the plate. While it isn’t fancy, it is a staple and the hardest working BBQ side.
Ingredients.
2 cups green cabbage, thinly shredded
1 ½ cups red cabbage, thinly shredded
1 cup shredded carrots (or buy a pre-cut bag of all 3 at almost any grocery store)
½ cup vegan mayo
2 ½ tablespoons apple cider vinegar
1 tablespoon coconut sugar*
½ teaspoon salt
½ teaspoon celery seed
¼ teaspoon ground black pepper
*substitute any sugar
Equipment & Pantry.
Steps.
Combine cut vegetables.
Whisk together ½ cup vegenaise, 2 ½ tablespoons apple cider vinegar, 1 tablespoon coconut sugar, ½ teaspoon salt, ½ teaspoon celery seed and ¼ teaspoon ground black pepper.
Pour dressing over vegetables and massage to combine.
Chill for 1-2 hours to marinate. We think it is even better the next day!
